Vegetarian food in Corsica

I'm off to Corsica for a week's holiday shortly, but being vegetarian I am concerned that most of the indigenous cuisine I have read about seems to mention game and poultry in abundance, but few, if any, veggie options. Does anyone know of good meat-free specialities I can look forward to? (We're staying in the Gulf of Valencia)
  
  


· While studying at the University of Corsica, I worked in a restaurant that served Corsican specialities. For the vegetarian option, may I suggest dishes made with the versatile Corsican cheese, brocciu, eg cannelloni au brocciu , omelette au brocciu or savoury fritters followed by fiadone - a light brocciu flan with a lemony taste, sweet fritters or brocciu sprinkled with brandy. A variety of fish and seafood is also available. Fried polenta sprinkled with sugar is ideal for children. Also look out for the tasty jams made with figs and chestnuts.
